Does anyone know if the supermarkets (Dia, Mercadona or Eroski) sell Bulgar Wheat? Failing that, can I use Cous Cous to make tabbouleh?

Never seen it in Mercadona but you might find it in Carrefour health foods section - look for trigo bulgur or trigo burgol.

Otherwise yes, tabbouleh works well with couscous (in fact I prefer it!)

Are there no Arab butchers in your vicinity? They usually have it.

In my opinion Cous Cous works just as well in the finished product.
