What To Do With Olives

I have been given a bag of olives. I think they were from last year and are salty. What do I do with them now?

Any ideas? :wave:

Hi Unicorn,

Free Olives.............already salted.
Wash a portion, place in Tapas bowl. Pour a glass of Estrella Galicia, or Valdepenas Tempranillo if you prefer vino, proceed to Terrace and watch the world go by............... :D

I think she said I had to bash them and soak them first as they are very salty. Well, she definitely said I should do something else before eating them............... Then wine and terrace? :crazy:

Or add some anchovies, basilica and olive oil and blend with a stick mixer and you'll have some nice tapenade to go with your fresh crusty bread !

I have now soaked the olives for a few days as they were a bit bitter, changing the water every day. What do I put in the jars with them for short term? Water, salt, can the salt be ordinary not preserving? and maybe a bit of lemon and some garlic. Principally it is whether you can use ordinary salt?

When I was shown how to do them I put them in salted water, changing every two days, I used sea salt. After 1-2 weeks, wash off thoroughly in cold water. Drain and put into clean jars with water, add few sprigs fresh thyme, few pieces of chopped red pepper, 3 whole cloves of garlic unpeeled. Leave for about a week in the fridge then enjoy!(I also used mustard seeds but not authentic,)

Sorry never heard that one, I would have thought that was too much like pickling and I don't think I have ever heard of or tasted pickled olives.
