Dont get me wrong as I am not into chutney making at all. However, our neighbour, a singer from Manchester, has grown by accident more than by design, hundreds of tomatoes and peppers. She has offloaded as much as she can and now wants to make chutney from tomatoes and peppers.
Any budding Dehlia Smiths out there come up with a few recipies??

Yeah right, we believe you. Try this:

Sweet Tomato and Pepper Chutney

4 tablespoons olive oil
3 medium onions, chopped
4 green and/or red peppers, deseeded, skinned and chopped
1 clove of garlic, crushed
450g tomatoes, skinned and chopped
1 teaspoon ginger
½ teaspoon mixed spice
1 teaspoon allspice
170g sugar
150ml white wine vinegar
115g raisins

Saute the onions in the olive oil for about 30 secs. Add the peppers, garlic, and spices & stir well. In another pan heat the vinegar and sugar together until the sugar has dissolved. Add the raisins, stir then combine the two mixtures in one saucepan. Simmer for about two hours, stirring occasionally. Pour into a clean, dry jar. Cover and refrigerate.

this may come a bit late but another way to use up surplus suppies of tomatoes and peppers is to roast them up in the oven and then blend with plenty of garlic to make yummy pasta sauce which can be frozen.
You can add alsorts of other vegetables as well if you like.

Good one hillybilly but you might want to add a single slice of gelatine (1 slice per 250 mil) during the final cooking stages to aid preservation.

just about to try the recipe after a similar glut,but not sure when to add the tomatoes. Please clarify! Also do you have to sterilise the jars?thanks

Sorry - the tomatoes go in with the peppers etc. Either sterilise the jars or use those ones with a rubber seal.
