Hi all
looking for a good recipe for stuffing balls..promised to make them for Xmas and they are not something i am used to ..anyone have have a good easy recipe

ok here goes
recipe from the excellent spanish country kitchen book by linda tubby
ingredients
150g minced pork
150g minced veal
1 small grated onion
i garlic clove crushed
1 egg beaten
i tbls chopped fresh mint
2 tbls chopped fresh parsley
1 tbls fine fresh breadcrumbs
pinch of cinnamon .............i didn't use this!
sea salt + ground black pepper
plain flour for dusting
2 tbls best olive oil for frying
method
put all the meat + onion + garlic + egg + mint and 1/2 of the parsley in a large bowl and mix in the breadcrumbs, cinnamon { yuk } ! and salt/pepper.mix with hands to a paste and form 1.5 cm balls or thereabouts. heat oil and fry over high heat to colour then reduce to fry off gently to be crunchy outside and juicy [but cooked] inside or finish off in the oven.
