Due to receiving conflicting advice - can anyone advise exactly which documents we should be carrying in the car, please?

You don't say if you own the car.......
I carry all the documents for my Spanish plated car. There have been posts that this is not necessary, but it smooths the meeting when the Boys in Green( Guardia Civil) want a chat.....

If it has had an ITV then you must also carry the ITV report that was issued when it was last tested. The stamp on the Ficha Technica and the windscreen sticker is not sufficient.
In theory you no longer need to carry proof of insurance as the Guardia have access to the insurance database but it would still make sense to avoid any problems.
I don't think you are obliged to carry proof of payment of road tax as this is not a police matter, it is between you and the town hall, but again, it makes sense to carry the bank receipt.

Ye Gods We only bought the car in November (last one was stolen from our underground garage) so we have not got the previous ITV paperwork. However, we are taking it at the beginning of May, so will keep that one (providing it passes ) in the car. Copies are not always accepted unless they are certified copies.
Carry the originals in the car and keep a copy at home.
