I'm not at all convinced Seville is a good subject for heliciopter tours. It's a bit flat and Seville (home city of my wife) for me is about atmosphere, the people, the narrow streets, the food, the drink, the architecture, the history (and while Sevillanas cannot be considered by many as the best form of flamenco even the music - although for any budding flamenco guitariast it is one of the easiest forms to play and dance to. And of course you can find other flamenco forms there ) .
I can imagine helicopter tours being great in Ronda or further afield Granada but not Seville.
The balloons I can imagine as the climate is generally good for that. There are seasons when the wind and rain (or lack of) can be confidently predicted and landing sites are numerous. [ I remember a mate in the UK who won in a charity raffle balloon trip in Southern England. After turning up three times and it having to be cancelled at the last minute he gave up. They did give him the traditional bottle of champagne you normally drink at the end of a successful trip but he was not impressed. But sports that involve weather are just like that ].
But enjoy

You use to be able to take a light aircraft tour from here Aeródromo La Juliana in Bollullos de la Mitación, It was 85€ per person approx 5 years ago for just over an hour.
