Butternut Squash

Has anyone tried any unusual recipes with butternut squash ?

We've not used any for ages and have just been presented with six, so we've had a look through our recipes and couldn't find anything really exciting....so all recipes gratefully received... :)

Any pumpkin recipe would work. I love pumpkin pie with cinnamon. My kids loved Butternut squash and pear when I was weaning them which I think would work really well as a pie filling. It's great in soup.

looking at them lovely recipes they use 24 okra ?? what is okra and where can you get them??used in a recipe for sweet potato gumbo ?? how good does that sound,

I haven't seen them here in any of the big supermarkets but, have occasionally seen them at small Spanish grocers and in the markets. They're lovely stewed in a rich tomato sauce too!

Thanks for the picture, i think i may have seen them at the saturday market, the one on the coin road Mijas,are they hot like a chilli?? cos the gambo sounds the right place for them, but it says 24, ?? so don't think they will be hot,anyway thanks again,wonder what we could use instead if not easy to get,we fancy having ago at the gambo.

That looks very tasty Ken as I love anything with sweet potato!! You could just omit the okra as many do. It's mainly the texture that it's used for as okra is quite sticky and gives the gumbo thickness. If you omit it just make a roux before adding the water/stock or add some cornflour and use some green peppers or green beans for the colour. Let us know how it turns out :D

We had curried pumpkin for tea last night, lovely.
I onion, chopped, I green chillie, chopped and de-seeded , 2 green peppers (long type) 2 cloves garlic, 4 chopped tomatoes- fry onions and peppers till soft and add garlic, toms and chillie.
Add spices- I used: cardamon seeds, smoked paprika, cumin seed and fennel seed.
Then add peeled and chopped pumpkin.
Add water as needed.
Cook till tender (took about an hour) add chopped fresh coriander and 1tbsp garam masala

Delicious :clap: (hubby said it was ok, but he´s fussy)

Nice one, will give it ago,but must leave out the garlic for her in doors,so will add more chili to taste,
