Now our favourite place for a paella has been shut by nerja council can anyone recommend a cheap open pan cooked paella anywhere between nerja and torre del mar or further if ifs really good!

Does anyone have a pretty simple authentic paella recipe with type of stuff to buy and amounts etc...
I would love to give it a try...

Not Ayo's surely? Although I found in the past his prawns have not tasted very fresh, but it did have a good flavour from the wood fire.

When I've made my version of paella I've always used the packets of paella mix (I think Mercadona do their own version but I think the better one is Carmencita Paellero which is widely available). I use a round rice and after adding the stock let it simmer slowly until the stock is absorbed, then turn it off and cover with foil and leave for about 20 mins. I tend to use prawns plus mussels and chicken if I have it. Watching Ayo making his years back, he fried off the meat then possibly added peppers I think, then the rice, stock, then the prawns and mussels near the end.

I also would like to know which restaurant it is. As for a recipe, I can help here. I have been cooking paella here for over 20 years and probably served over 500 portions. The biggest was 2x60cm paellas for over 50 people. It’s actually very easy to cook with the right ingredients and usually comes out better than you will get in most restaurants. It’s a long recipe so I will post it in the FAQ section tomorrow and post when I have done it.

Its mauris on playazo. The council are yet again wanting to get rid of the last of the beach restaurants and replace them with something else. Mauris was always packed every weekend and pretty busy during the week aswell. They were closed down maybe a few weeks ago leaving 11 families with no work. The owners and staff and customers are understandably very upset by it all.

My wife makes a nice paella but the odd thing is, she hasn't cooked it for years, maybe since we moved to Spain. She would often cook one for family and friends back in the UK. No matter though as it's often the first course at my mother in law's on Sundays.

My wife's Paella is better than any I have ever had in a Spanish restaurant. She is a professional chef but trained in the UK not Spain.

I am not fond of Paella but the best bar none was at Bar El Acebuchal.
When we lived in Frigilana, 13 years ago now, we went to a wedding, next door x3 neighbours. The reception was at Bar El Acebuchal and was Paella
Dad had made it and was so proud and rightly so, delicious.

My OTH makes the best Paella according to our daughter, he is also a chef and cooked for the officers mess when he did his national service in Las Palmas. Now a stonemason but still does most of the cooking. :lol: :lol:
