I love raspberries especially with my morning cereals and as we grow the things in the north of Extremadura we have lots of them in the shops all summer long. However, no matter what I do, and how I store them, they go mouldy really quickly. I have even taken to placing them one by one apart on a double layer of kitchen paper on the top shelf of the fridge. Nope. They still go mouldy after two days.
Any advice on keeping raspberries for longer than two days, anyone?

I spread mine out on greaseproof paper & layer them in the freezer. Once frozen, I bag them up & keep in the freezer. They last for ages - I've still got a couple of bags from last year which are fine - probably a good thing, as this year with all the rain, they're not looking so good
Of course, you could jam them, or they make a very tasty icecream !

Raspberry ice cream? Good idea! I make fig ice cream every year when we have lots of figs and that is always nice.

We buy our raspberries in Mercadona. They last in the fridge for about 6 days in the punnet.

Fig ice cream is best done with ripe figs. Cut them in half and scoop out the insides. Squish the pulp through a sieve to get the fig mixture nice and smooth. Make the ice cream with your preferred ingredients: milk, cream, eggs, sugar, etc and stir in the fig mixture. Freeze.
Black figs are best for this recipe as the pulp is already very smooth.
