Planting new trees

Hi everyone
We live in campo Andalucia and are planting a variety of fruit trees and also almond and carob to boost up our numbers ......but I was just wondering if I was missing a trick as I have seen some Spanish planters that seem to wrap their new planted trees in what looks like plastic bags .....is the reason for this just frost protection and I just don’t understand why it wouldn’t cause mould .any clarifying information would be appreciated and any advice on experiences would be appreciated as we are planning to plant a lot more trees over the coming years and would like a good success rate .....thanks again

The only trees in bags around us are Mangoes in their first year. They do protect most new tree plants hereabouts with anti rabbit tubes but I'm sure you know what they look like.
