You have covered most of the things you can make but lemon marmalade is a good option that keeps indefinitely. Zest the peel and freeze it, I have done this with a surfeit of limes. If you have the freezer space freeze the juice.
Giving them to your friends and neighbours is the Spanish approach to spare fruit.

How about limoncello?
That's what we use our lemons for.
Cheers

Re: what to make with a glut of lemons?
We have two lemon trees and two orange trees. Both give us a huge harvest. Oranges are easy . Drinks and eating mid morning walk. The lemons are much more difficult. We give them away by the shopping bag. One year we went to the UK about now and filled the redundant spare wheel well and more. They were easy to dispose of when similar lemons ( not eco) were selling for 50p each.
As Sid says give them away but if to Spanish folk expect “ more” in return. We came home and found a sack hanging from the horse hitch - a live rabbit for eating inside.

You could also just freeze the juice in ice cube trays

Get down to the supermarket and buy a couple of gallons of Larios, problem solved, but seriously, what about Limoncello. there are recipes all over the internet and it's not difficult to make, all you need is lemons water, sugar and vodka!
Re: what to make with a glut of lemons?
Anyone considering using some of their glut of lemons to make lemonade may want to first check that the bottom of the liquidisor is firmly attached . Believe me, over a litre of water, sugar and chopped lemons spreads an awful long way It must have taken us an hour to clear it up and even later last night I kept finding yet more sticky bits inside cupboards and drawers
I am wondering whether to try again today or not. I hadn't used the liquidisor attachment of my food processor for a few years and hadn't thought of checking that the base was fully screwed into place. Neither myself nor my OH are feeling at our best at the moment and could have done without that Having had some delicious home made lemonade with mint on our trip to the Alpujarras last month, I thought it would lovely and refreshing in this horrible heat and humidity.

Re: what to make with a glut of lemons?
update from Los Cortijillos ... our local bar/ restuarant in Alcaucin makes a delicious lemon mousse ... last time we went i was very disappointed that it was not available ... Aricelli said they couldnt find any lemons! ... so next day we took a sack of said lemons up to them ... and did similar a week or so later ...sadly now the few lemons left on the tree are over-ripe and not good any more
Re: what to make with a glut of lemons?
Ours are falling off in the heat but we still have loads. We left two big bags full by the bins in case someone would like them. Lemons are the only thing we can successfully grow here. All the other fruit trees are a disaster, probably because we don't irrigate them every night with gallons if precious water.
Re: what to make with a glut of lemons?
and I omitted to give you sympathy Wicksey for that horrible sticky lemon mess you had to clean up ... the other thing which is similarly horrible to clean up is when you drop an egg!
and I am wondering why you came back to heat and humidity here ... not stay in Alpujarras?

Re: what to make with a glut of lemons?
The house was booked up after us and also the host pointed out that the hunting season starts there mid August and it wouldn't have been very safe for us and the cats. We have already lost one cat here during hunting season, we guess by hunting dogs. The area all around the rental house was hunting grounds with hundreds of rabbits and partridge, plus Ibex, deer and foxes which are all hunted. There were a lot of grain feeders on timers that deposited grain to attract the animals, and a short distance away there were hides so the hunters could just sit there and pick them off as they came to feed. It's bad enough around here when they shoot nearby but I think there would not be very pleasant. Whilst it was lovely and isolated, we're not fans of twisty mountain roads so we didn't go out much or very far, so a longer period may have become a bit wearing.
We are still looking for somewhere else to go next summer that is not so mountainous but less humid, that's if we haven't actually moved by then!
Oh, and I know what you mean by the egg too. I did make a batch of lemonade this morning, although I now can't budge the base of the liquidisor as I've tightened it a bit too much
