Sollo - Michelin star Restaurant in Fuengirola
Sollo restaurant is in the Higueron Hotel in the Higueron district of Fuengirola. The head chef Diego Gallegos specialises in sturgeon, caviar and river fish and subsequently bears the name "The Caviar Chef". The restaurant has a special menu which changes seasonally. Even before the ordering of food begins you are invited to taste the different caviar on offer, either to experience the unique flavours; to decide which caviar you would like to feature in your main meal, or both!

Gallegos opened his minimalist restaurant in the old quarter of Benalmadena town and moved to a new location in March 2015. This boutique restaurant offers 6 tables for up to 14 diners and bookings can be made online on Sollo's webpage; for bookings over 8 people, and other party booking inquiries, you will have to ring up. The restaurant is open from 19:30 - 00:00 in the evenings and is closed on Sundays.
