Malak, Jaen – one Michelin star
Cutting-edge lighting and an open kitchen characterise chef Javier Jurado’s restaurant in the heart of Jaén. The cuisine is anchored in his native Sierra de Segura, situated to the east of the city: ancient regional dishes are celebrated with a creative update, using both avant-garde and traditional techniques which convey the aromas and colours of the vast natural park. Since Jaen province is the world capital of olive oil, EVOO is a major feature of Jurado’s cooking, especially Castillo de Canena, one of the most innovative brands.
Two tasting menus take diners on geographically anchored journeys: 10-course Lost Villages offers dishes from small, abandoned pueblos - rabbit tortellini with chestnuts and andrajo (rabbit, onion, pepper and garlic stew) and 13-course Sierra de Segura celebrates the hillsides and forests (mountain curry, smoked eel and cured venison).
Malak is the Arabic word for angel, in homage to his grandparents and their restaurant, Los Angeles, where Jurado learned his love of food.
Malak was awarded its Michelin star in 2023.
